Turkey Sliders with Sweet Potato Buns

Ok well clearly I have not been keeping up with this here blog.  Shame on me!  It’s not even the holidays yet, and I’m falling so far behind.  I have still been cooking and working out, but documenting has been few and far between.  Yikes!

I’ve tried a couple good recipes lately and need to share them.  The one I have already made twice, at my husband’s request, is these turkey sliders from Taste of Home.  Of course I adapted them to fit what I had in the pantry so my recipe looks a little different.

Turkey Sliders with Sweet Potato Buns

1 lb ground turkey meat
6 slices bacon
2 large eggs
1 tsp dried basil
1/2 tsp cumin
3 tsp soy sauce
1/2 cup grated Parmesan cheese
2 large sweet potatoes
Colby jack cheese (to top the burgers)


Preheat oven to 425 degrees.  Cut sweet potatoes into about 20 rounds that are about 1/2 inch thick.  Place sweet potatoes on an ungreased baking sheet and bake for 30 minutes until cooked, but not mushy.

While those are cooking, fry bacon in a large skillet until crisp.  Remove from skillet and blot the grease off, but leave the remaining grease in the skillet.  Chop bacon into small pieces and combine with turkey meat, eggs, basil, cumin, soy sauce, and Parmesan cheese.

Form the meat into small slider patties and place in hot skillet.  Cook about 3 minutes on each side until no longer pink in the middle.  While the sliders are still hot, place colby jack cheese on top of each slider to melt.

Top with mustard and serve between two sweet potato buns.  Seriously, you guys want to make these!  They are that good.
