I tried a new recipe on Tuesday night from one of my favorite blogs Keeping Up With The Joneses. It was good, but pretty labor intensive in my opinion. I also made some brown jasmine rice to accompany the chicken bundles which that alone takes 45 minutes! So maybe I should have gone with a salad and it would have been an easier meal 🙂 Here is the recipe:
1 1/2 cups chopped cooked chicken
1/4 cup finely shredded carrot
3 tablespoons sliced green onions, plus some extra for garnish, so about 4 stalks
3 tablespoons chopped cashews
1/2 teaspoon ground ginger
1/4 teaspoon crushed red pepper flakes
1/4 cup hoisin sauce
1 can (8 oz) can crescent rolls
-Preheat oven to 375 degrees
-Chop cashews into smaller pieces (I used my antique nut grinder that my mom gave me)
-Add chicken, carrots, green onions, cashews to a bowl, add 1/4 tsp crushed red pepper flakes, 1/2 tsp ground ginger, and 1/4 cup hoisin sauce, and stir well
-On an ungreased cookie sheet, seperate the dough into four rectangles. Pinch the seams together to blend well. Spoon about 1/4 of the mixture on to one side of the dough and pinch the seams together. Use a fork around the edges to press together. Poke a hole in the top of each bundle to allow steam to escape.
-Bake 16 minutes or until golden brown
