French Silk Pie for Valentines

For Valentine’s Day this year, my sister and I decided to cook a meal for our men instead of fighting the crowds at a restaurant.  Well this turned into me cooking the meal since my sister was running late, so it was nothing too special.  I just made spaghetti, ceasar salad and garlic bread served with sparkling cider.  But the dessert was heavenly!  I borrowed this recipe from one of my mom’s friends and it is oh so good!!  I forgot to double the chocolate part so it didn’t come out quite as well as when she makes it, but it was still delicious!  Here is the recipe:

French Silk Pie

**Triple pie recipe for 9″ or 10″ springform, graham cracker crust or pecan crust is used for springform. Topping does not need to be tripled.**

-1 stick butter softened- not melted
-3/4 cup of sugar
-1 1/2 oz. square unsweetened chocolate-melted
-1 teaspoon vanilla
-2 chilled eggs

Topping:
1 pint of heavy whipping cream
1/2 cup sugar
Chocolate sprinkles, mini toll house morsels, chocolate shavings or dusting of unsweetened cocoa for decoration 

Use electric mixer, cream butter and sugar, add chocolate and vanilla.  Continue to mix on high beating in eggs one at a time, beating for 10-15 seconds after each egg.  Mixture will thicken to a nice consistency.  Spoon into baked pie shell. 

Mix whipping cream in clean deep bowl on high, slowly add 1/2 cup sugar as it mixes.   Mix until firm.  Spread on top of pie.  Decorate with preferred topping.

Pecan Crust lining for spring form pan:

1c. flour
1 stick butter or margarine, melted
1c. finely chopped pecans

Press into bottom and up sides of springform.  Bake at 350 degrees for 12-15 minutes.  Cool before filling with pie mixture.

My hubby also surprised me with flowers, a trip to the hair salon to get highlights (yay!), a Brighton charm for  my necklace, and a tanning package.  He is the best!  It was a wonderful Valentines this year!
